Brazilian Black Beans Recipe

When you learn how to use it properly, you will wonder how you ever survived without one. (This recipe may be doubled if you have a 10 quart pressure cooker. See below for the double recipe).

Ingredients:

  • 1 lb dry black beans (You could also use white or pinto beans)
  • 2 Quarts of water
  • 1/2 large onion – diced
  • 6-10 garlic cloves – minced
  • 2 bay leaves
  • 1 Tbsp + 1tsp Sea Salt

Instructions (Pressure Cooker):

  1. Add the following to your pressure cooker:
    1 lb rinsed beans
    2 Quarts of water
  2. Lock the pressure cooker lid in place and put on stove at high heat.
  3. Set the pressure on high (approximately 15 psig)
  4. When the pressure cooker is at pressure with steam escaping from the relief valve, lower the heat to keep pressure in the cooker but not burn the beans (setting 2.5/9 on the Real Food Test Kitchen induction stove).
  5. Set a timer for 45 minutes.
  6. Place the following ingredients in a container:
    onion
    garlic
    bay leaves
    Sea Salt
  7. When the beans have cooked for 45 minutes at pressure, remove from heat and release pressure using the quick release method.
  8. Once pressure is released from the cooker, carefully unlock and remove the lid.
  9. Stir in the container full of ingredients.
  10. Lock the pressure cooker lid in place (High pressure setting) and return to high heat.
  11. When the pressure cooker is at pressure with steam escaping from the relief valve, lower the heat to keep pressure in the cooker but not burn the beans (setting 2.5/9 in the Real Food Test Kitchen).
  12. Set a timer for 20 minutes.
  13. When the beans have cooked for 20 minutes at pressure, remove from heat and release pressure using a quick or natural release method.
  14. Once pressure is released from the cooker, carefully unlock and remove the lid.

Serve over any variety of rice or quinoa and enjoy! Try garnishing the beans with fresh chopped ingredients like onions, cilantro, tomatoes, avocado, pepper flakes or other creative and colorful flavors.

We like to eat it on top of rice, with fresh salsa (see recipe here), fresh guacamole, and freshly grated white cheddar.

Instructions (Normal Pot):

  1. Add the following to your pot:
  2. 1 lb dry beans of your choice – rinsed (White is our favorite)
  3. 2 Quarts of water.
  4. Bring to a boil and boil for 2 minutes stirring frequently.
  5. Remove from heat.
  6. Cover and set aside to soak for 1 hour.
  7. Drain water and rinse beans.
  8. Add 6 cups of water and all remaining ingredients.
  9. Simmer beans for 1.5 hours or until beans are tender.
